A takeaway jacket potato business is to open in Knaresborough next week.
Str8 Jackets will open at 22 High Street on December 7 at 11am.
The York couple behind the venture have said they want to be a “fast and easy over the counter experience".
Emma Wilson, 44, and her partner Craig Eastwood, 45, plan to open seven days a week and employ up to three staff members in the new year.
The takeaway is in the former Claro Hairstyles salon and the couple said they have spent over £20,000 refurbishing the site.
Ms Wilson told the Stray Ferret that they “saw the opportunity and just went for it".
The pair haven’t owned a restaurant or worked in the catering industry before and decided to take the leap when they saw the building was available.
Ms Wilson’s background is in barbering and a jacket potato deli became her dream after she was forced to quit after being diagnosed with breast cancer.
When in recovery the couple holidayed in Ibiza and Ms Wilson found herself craving nothing but jacket potatoes and the dream was born.
A few years passed and the couple spotted the empty unit on the High Street and felt they had to take the opportunity to open the business.

Ms Wilson said:
We were in Knaresborough and saw it. I just turned to Craig and said, ‘that’s my shop, I need to open there’.
I am really excited about it, we have put our own spin on it so I can’t wait but I’m nervous too.
I have been coming to Knaresborough for many years and we have had really positive feedback so far.
